Hey friends,
I would like to compile a small list of "quick" recipes that I can use to make dinners during the week. Sometimes I don't have a lot of time to cook a big meal or look through cookbooks, so if anyone has some quick healthy dinner ideas that won't take like more than 30-45 min, please pass them along!!! :)

I just found you blog through Janet's :) I've got a real easy recipe that I just used last night.
Tuna Noodle Casserole
Serves 6 - Total Time=35min
1 bag egg noodles
2 cans tuna
2 cans cream of mushroom
1 small bag mozzarella cheese
Bring pot of water to a boil. Add egg noodles and drain when cooked. Open and drain cans tuna. Combine tuna, cream of mushroom and egg noodles into a casserole dish and stir till mixed throughly. Sprinkle cheese evenly over top of dish. Place lid on top and microwave for 20min or until cheese is golden brown.
I like to serve a vegetable side with this too. Since it usually serves about 6 you could cut the recipe in 1/2 for you and Bobby or just save the left overs for lunch . Hope that helps! :)
Hey there, friend! Rachel Ray has a cookbook out filled with 30 minute meals. I haven't tried her cookbook, but have watched her on her cooking show and all her meals seem great and easy to do. Here is the link to her cookbook.

Lis, I am still looking for more recipes. You can also add wheat germ as a topping and for recipes using egg noodles, I use Barilla Plus pasta. It is multigrain, a source of fiber & protein and contains ALA Omega-3. Love ya!
